Ingredients:

For the Rice Pilaf:

  • 1 teaspoon Baity Baharat seasoning (or more to taste)

  • 1/4 teaspoon ground turmeric (for a golden colour and extra flavour)

  • 2 cups vegetable broth (or chicken broth for non-vegetarian version)

  • Salt and freshly ground black pepper, to taste

  • 1/4 cup raisins (optional, for a sweet touch)

  • 1/4 cup toasted almonds or pine nuts (optional, for crunch)

  • Fresh parsley or coriander, chopped (for garnish)

Instructions:

1. Rinse the Rice:

  • Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky. Drain well and set aside.

2. Sauté the Aromatics:

  • In a medium saucepan or deep skillet, heat the olive oil or butter over medium heat.

  • Add the chopped onion and sauté for 3-4 minutes until it softens and becomes translucent.

3. Add the Spices:

  • Stir in the baharat and ground turmeric and raisins. Let the spices cook with the onions and garlic for about 1 minute, stirring constantly, until fragrant and the oil is infused with the spices.

4. Toast the Rice:

5. Add the Broth:

  • Once the broth is boiling, reduce the heat to low, cover the pan, and let the rice simmer for 15-18 minutes or until the rice is tender and the liquid has been absorbed.

  • Avoid lifting the lid during cooking to keep the steam trapped inside. If needed, check the rice about 15 minutes in to see if it’s fully cooked. If the rice is still firm or there’s liquid left, cover and let it steam for an additional 5-7 minutes.

7. Rest the Rice:

  • Once the rice is cooked, remove the pan from the heat and let it sit, covered, for about 5 minutes to allow the grains to set.

8. Add Optional Garnishes:

  • Fluff the rice with a fork to separate the grains.

  • Sprinkle over toasted almonds or pine nuts (optional) for added texture and a nutty flavour.

  • Garnish with freshly chopped parsley or cilantro for a pop of colour and freshness.

9. Serve:

  • Serve the Baharat-Spiced Rice Pilaf warm as a side dish with your favourite Middle Eastern-inspired meals, such as grilled lamb, chicken kebabs, falafel, or roasted vegetables.
